Cook macaroni noodles until al dente, then strain.
In the same pot, melt butter, add flour, then heavy whipping cream. Stir in Mexican style cheese and Fontina cheese until melted.
Add in onion, cilantro, and jalapenos.
Combine cooked macaroni with cheese sauce, then top with taco seasoning, Mexican style cheese, cheddar Monterey Jack cheese, and jalapenos.
Bake at 400°F for 25 minutes.
