Lean protein source (e.g., ground turkey, chicken)

Instructions:
Preheat the oven and prepare a sheet pan.
Add diced peppers, onions, and yellow potatoes to the sheet pan. Season with salt, pepper, and olive oil. Roast in the oven until tender.
Place the lean protein source over the roasted veggies, season, and cook until browned and fully cooked.
In a bowl, blend eggs, egg whites, and cottage cheese. Pour this mixture over the cooked meat and veggies on the sheet pan.
Sprinkle cheddar cheese on top and return the sheet pan to the oven to finish cooking.
Once cooked, slice the mixture into 10 equally sized rectangles.
Place a portion of the mixture onto a burrito-sized tortilla, add sauce and cilantro.
Roll up the burritos and wrap them in parchment paper for freezing.
To reheat, microwave for 3-4 minutes in the morning. Enjoy your high-protein breakfast burritos!
