Brown minced lamb in olive oil until it gets a little color and unwanted fat is removed.
Add chopped onion, carrot, and garlic until they disintegrate and form a puree.
Stir in tomato puree, red wine, rosemary, and chicken stock. Cook for 3-4 minutes.
Prepare mashed potatoes seasoned with egg yolks and generous amounts of Parmesan cheese.
Spread the mashed potatoes on top of the lamb mixture.
Bake in the oven for 18-20 minutes until the top is golden brown and crispy.
