Spicy Pepperoni Pizza inspired by Prince Street Pizza

Ingredients
- 500 grams bread flour
- 1 tablespoon kosher salt
- 4 grams yeast
- 1 tablespoon olive oil
- 1 1/2 cups water
- Canned tomatoes
- Salt
- 1 tablespoon sugar
- Pepperoni
- Fresh mozzarella or low moisture mozzarella
- Pecorino Romano cheese
- Basil
- Hot honey
Instructions
- In a food processor, combine bread flour, kosher salt, yeast, olive oil, and water. Process until the dough forms and gluten is well developed. Let the dough rise in an oiled pan for 1-2 hours until doubled in size.
- Prepare a simple tomato sauce by simmering canned tomatoes, salt, and sugar until reduced. Blend until smooth.
- Cut thick slices of pepperoni and thin slices of fresh mozzarella. Grate Pecorino Romano cheese and chiffonade basil.
- Press the risen dough into a greased pan, top with a layer of cheese, followed by sauce, pepperoni, and additional cheese. Optionally, drizzle hot honey on top.
- Bake at 450°F for about 20 minutes or until the pepperoni cups are almost dark. Let the pizza cool on a rack before slicing.
