Slice chicken thighs into cubes and season with black pepper, chilli flakes, garlic powder, onion powder, soy sauce, and olive oil. Mix well.
Prepare the spicy sauce by combining light mayo, ketchup, sriracha, minced garlic, ginger powder, rice vinegar, and a dash of milk. Adjust consistency with milk.
Cook seasoned chicken in light butter until golden brown and crispy. Add fresh parsley, mix well, and set aside.
In the same pan, cook onions with butter until caramelized. Add green onions, carrots, and additional seasoning. Mix well.
Add eggs and scramble until cooked, then add day-old cooked rice, soy sauce, oyster sauce, and green onions. Stir until fragrant.
Serve the fried rice with the crispy chicken and the garlic yum yum sauce. Enjoy your high protein meal!
