Ingredients

  • Green peppers
  • Olive oil
  • Salt
  • Black pepper
  • Dried oregano
  • Granulated garlic
  • Eggs
  • Butter
  • French baguette

Instructions

  1. Cut green peppers into julienne strips after removing seeds and membrane.
  2. Sauté peppers in olive oil over medium-high heat until softened.
  3. Season peppers with salt, black pepper, dried oregano, and granulated garlic.
  4. Let peppers cool and marinate overnight for best flavor.
  5. Crack and cook eggs in a preheated pan with olive oil, adding in the sautéed peppers.
  6. Add butter to the eggs and cook until three-quarters done, keeping the eggs in big ribbons.
  7. Warm the French baguette in the pan to soften the crust.
  8. Open the baguette, fill with the egg and pepper mixture.
  9. Enjoy the Chicago-style pepper and egg sandwich!
