Sea salt and freshly cracked black pepper to taste
1 tomato, thinly sliced
Shredded iceberg lettuce
Sandwich bread slices
Instructions:
Drain and rinse the chickpeas, then mash them semi-coarsely in a large bowl.
Add Greek yogurt, Dijon mustard, red onion, garlic, parsley, lemon juice, salt, and pepper. Mix well.
Adjust consistency with more yogurt if needed. Slice tomato and prepare lettuce.
Toast sandwich bread slices lightly.
Spread chickpea salad on a slice of bread, top with tomato slices, lettuce, and another slice of bread.
Serve and enjoy this heart-healthy, no-cook sandwich with a side of chips and cold beer.
