Prepare the dry rub by combining kosher salt, paprika, dry mustard, black pepper, and cayenne. Pat ribs dry and generously coat them with the dry rub on both sides, pressing lightly to adhere.
Wrap each rack in two layers of foil and bake in a 350-degree oven for about 2.5 to 3 hours until tender but not falling off the bone. Test for doneness by poking through the foil with a cake tester.
Drain the juices from the foil packets and mix them with store-bought barbecue sauce to fortify the flavor.
Preheat a gas grill to medium-high and oil the grill grates. Grill the ribs, basting with thinned-out barbecue sauce, until caramelized and charred, adding more sauce with each turn.
Optionally, cut the ribs into smaller pieces for easier grilling. Once done, remove from the grill and let rest before cutting between the bones and arranging on a platter.
