Roast sweet potatoes and garlic in foil at 200°C for 45 minutes to an hour until cooked.
Cook smoky bacon, then add diced onions, carrots, sage, oregano, rosemary, and thyme.
Stir in flour, then add red wine, tomato paste, diced tomatoes, peas, stock, bay leaves, and Worcestershire sauce. Simmer for an hour.
Boil and mash potatoes with butter, egg yolk, milk, salt, pepper, olive oil, nutmeg, and cheese.
Spread the meat mixture in a baking dish, top with mashed potatoes, and sprinkle with cheese.
Bake at 200°C for 25-30 minutes until golden and crispy.
