Cut ripe avocados in half, remove the pit, and slice the flesh into a bowl.
Add freshly squeezed lime juice and a generous pinch of salt. Mash with a fork to desired consistency.
Mix in finely chopped red onion and fresh cilantro. Adjust salt to taste.
For serving, microwave a sweet potato until tender. Cut it open and add a dollop of guacamole.
Top with chopped tomatoes, black beans, a squeeze of lime, non-dairy yogurt or sour cream, and sliced jalapeno. Enjoy!
