1.3 Kilograms Pork liempo, sliced into large cubes
1/2 teaspoon Salt
Ground black pepper
2 pieces Onions, chopped
6 cloves Garlic, chopped
1 and 1/2 cups Pineapple juice (unsweetened)
1/2 cup Light brown sugar
1/2 cup Soy sauce
3 pieces Dried bay leaves
Ground black pepper
2 cups Water
1/2 cup Vinegar
1/4 cup Salted black beans (washed and strained)
Instructions:
Pan fry pork liempo on a thin layer of oil over medium flame with salt and ground black pepper until fat is rendered and meat turns golden brown. Set aside.
Saute onions in rendered fat on high flame for 20 seconds. Add garlic and continue to saute for another 10 seconds.
Add the pan-fried pork and saute for 1 minute on high flame.
Pour in pineapple juice, light brown sugar, soy sauce, dried bay leaves, and ground black pepper. Mix thoroughly and set flame to medium.
Add water and vinegar, bring to a boil, and cook for 5 minutes. Reduce flame to low and cook until meat is soft and tender, adding water as needed.
Stir in salted black beans and cook for another minute on low flame before turning off the heat.
