Sweet and Sour Pork Adobo

Ingredients
- 1.3 Kilograms Pork liempo, sliced into large cubes
- 1/2 teaspoon Salt
- Ground black pepper
- 2 pieces Onions, chopped
- 6 cloves Garlic, chopped
- 1 and 1/2 cups Pineapple juice (unsweetened)
- 1/2 cup Light brown sugar
- 1/2 cup Soy sauce
- 3 pieces Dried bay leaves
- Ground black pepper
- 2 cups Water
- 1/2 cup Vinegar
- 1/4 cup Salted black beans (washed and strained)
Instructions
- Pan fry pork liempo on a thin layer of oil over medium flame with salt and ground black pepper until fat is rendered and meat turns golden brown. Set aside.
- Saute onions in rendered fat on high flame for 20 seconds. Add garlic and continue to saute for another 10 seconds.
- Add the pan-fried pork and saute for 1 minute on high flame.
- Pour in pineapple juice, light brown sugar, soy sauce, dried bay leaves, and ground black pepper. Mix thoroughly and set flame to medium.
- Add water and vinegar, bring to a boil, and cook for 5 minutes. Reduce flame to low and cook until meat is soft and tender, adding water as needed.
- Stir in salted black beans and cook for another minute on low flame before turning off the heat.
