Layer uncooked hash browns on the same sheet pan and bake until cooked.
Crumble the cooked bacon and mix it with diced Canadian bacon, maple syrup, garlic, and thyme.
Top the cooked hash browns with the maple bacon mixture.
Blend eggs, egg whites, and cottage cheese together. Season with salt and pepper.
Pour the egg mixture over the hash browns and top with sharp cheddar cheese.
Bake until the eggs are set.
Slice into 10 pieces and assemble each piece in a burrito-sized tortilla with spicy cream sauce.
Roll up the burritos and store them frozen in parchment paper for later enjoyment.
