Tomatoes (cherry tomatoes, ripe tomatoes, or sweet tomatoes)
Garlic
Salt
Oregano
Fresh basil
Olive oil
Hot pepper flakes
Fresh loaf of ciabatta bread
Fresh mozzarella
Parmesan cheese
Balsamic vinegar or balsamic glaze
Instructions:
Dice or chop tomatoes of your choice and mix with garlic, salt, oregano, fresh basil, and olive oil. Let it marinate on the counter.
Slice garlic thinly and sizzle in a skillet with olive oil, hot pepper flakes until golden and fragrant.
Slice open a loaf of ciabatta, spread the sizzled garlic and olive oil mixture on both sides, then cover with thinly sliced fresh mozzarella and Parmesan cheese.
Bake in a 375°F oven for about 25 minutes until the bread is crusty and the cheese is golden brown.
Top with the marinated tomato mixture, drizzle with balsamic vinegar or glaze, add extra basil, and serve.
