Make a quick burger sauce by combining mayonnaise, ketchup, hot sauce, and a tiny squeeze of lemon.
Slice the lettuce and tomatoes and season generously.
Form the beef into a ball and season with salt.
Place the beef ball in a ripping hot pan, salt side down, and place a piece of parchment paper on top.
Place a heavy bottom pot on top of the parchment paper and smash the beef ball until it is no longer a ball.
Add onion to the top of the beef ball.
Flip the beef ball and onion and cook with the burger juices.
Place a slice of cheese on top.
Add pickles and more of the burger sauce.
