In a bowl, mix together ground chicken, chopped yellow onion, diced jalapeno, minced garlic, paprika, ground cumin, salt, pepper, and shredded cheddar cheese.
Form four patties with the mixture.
Preheat the grill to medium-high heat and add the patties. Cook for about 5 minutes, flip them, and cook for a couple more minutes until they reach an internal temperature of 165.
Add cheese on top of the patties.
Serve the burgers on buns with a little bit of mayo spread on them, lettuce, and roasted carrots on the side.
