Instructions:
Marinate bone-in chicken thighs with turmeric.
Sear the chicken in mustard oil, then set aside.
In the same pot, add whole spices and sauté with red onions, ginger garlic paste, coriander powder, and Kashmiri chili powder.
Add tomato paste, tomatoes, and yogurt. Stir well.
Return the seared chicken to the pot, add water, and simmer.
Finish with kasuri methi, garam masala spice blend, and fresh cilantro.
Serve the chicken curry with Roti, raw red onions, and green chilies.
