Ingredients
- For Pita Bread
- 487 grams lukewarm water
- 14 grams instant yeast
- 18 grams granulated sugar
- 750 grams bread flour
- 15 grams fine sea salt
- For Gyro Meat
- 1.3 kilograms boneless pork Boston butt
- 3 grams dried oregano
- 9 grams paprika
- 6 grams fresh cracked black pepper
- 9 grams kosher salt
- 3 grams finely chopped Rosemary
- 5 cloves garlic, finely chopped
- 30 grams vegetable oil
- For Tzatziki
- 450 grams full-fat Greek yogurt
- 1/2 seedless English cucumber
- 15 grams very finely chopped parsley
- Salt and pepper to taste
- 3 cloves garlic, grated
- 18 grams extra virgin olive oil
- Additional Toppings
- Red onion
- 2 Roma tomatoes
- 2 russet potatoes
- Vegetable oil for frying
Instructions
- Prepare Pita Bread: Combine water, yeast, sugar, flour, and salt. Knead, let rise, and bake in a hot oven.
- Make Gyro Meat: Slice pork, season with oregano, paprika, pepper, salt, Rosemary, garlic, and oil. Skewer and roast in the oven.
- Prepare Tzatziki: Mix yogurt, grated cucumber, parsley, salt, pepper, garlic, and olive oil.
- Assemble Gyros: Fill Pita with sliced gyro meat, Tzatziki, red onion, tomatoes, and crispy fries.
