Groy Ray Mushroom Pizza with Balsamic Glaze

Ingredients

  • 4 tablespoons extra virgin olive oil
  • 2 8-ounce balls of pizza dough
  • 12 ounces varied mushrooms
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup finely chopped flat-leaf parsley
  • 1 cup heavy cream
  • 1 clove garlic
  • 8 ounces low moisture mozzarella cheese, shredded
  • 4 ounces Groy Ray cheese, shredded
  • 2 tablespoons balsamic glaze
  • Special Equipment
  • Two 10-inch round pizza pans or cast iron skillets

Instructions

  1. Preheat the oven to 450°F and place a rack in the bottom third of the oven.
  2. Coat the skillets with olive oil.
  3. Stretch the pizza dough in the skillets and let it proof for 45 minutes to 1 hour.
  4. Roast the mushrooms with olive oil, salt, and pepper until golden brown.
  5. Make the white sauce by simmering cream with garlic, salt, and pepper until thickened.
  6. Assemble the first pizza with cheese, mushrooms, and cream sauce.
  7. Bake the first pizza for 15-20 minutes until crispy and browned.
  8. Add balsamic glaze on top before serving.
  9. Assemble and bake the second pizza while the first one cools.
  10. Serve hot, garnished with parsley. Slice into wedges and enjoy!
  11. Note: Leftover pizza can be refrigerated for up to three days and reheated at 350°F for 8-10 minutes.
