Groy Ray Mushroom Pizza with Balsamic Glaze

Ingredients
- 4 tablespoons extra virgin olive oil
- 2 8-ounce balls of pizza dough
- 12 ounces varied mushrooms
- Kosher salt
- Freshly ground black pepper
- 1/2 cup finely chopped flat-leaf parsley
- 1 cup heavy cream
- 1 clove garlic
- 8 ounces low moisture mozzarella cheese, shredded
- 4 ounces Groy Ray cheese, shredded
- 2 tablespoons balsamic glaze
- Special Equipment
- Two 10-inch round pizza pans or cast iron skillets
Instructions
- Preheat the oven to 450°F and place a rack in the bottom third of the oven.
- Coat the skillets with olive oil.
- Stretch the pizza dough in the skillets and let it proof for 45 minutes to 1 hour.
- Roast the mushrooms with olive oil, salt, and pepper until golden brown.
- Make the white sauce by simmering cream with garlic, salt, and pepper until thickened.
- Assemble the first pizza with cheese, mushrooms, and cream sauce.
- Bake the first pizza for 15-20 minutes until crispy and browned.
- Add balsamic glaze on top before serving.
- Assemble and bake the second pizza while the first one cools.
- Serve hot, garnished with parsley. Slice into wedges and enjoy!
- Note: Leftover pizza can be refrigerated for up to three days and reheated at 350°F for 8-10 minutes.
