Marinate shrimp with sake, salt, and minced garlic. Let it sit for about an hour.
Heat olive oil in a pan, add shrimp, and cook until halfway done. Flip the shrimp and cook until almost fully done.
Add butter and soy sauce to the pan, creating a thick emulsion to glaze the shrimp. Be careful not to overcook.
Plate by adding rice to a bowl, top with shrimp and drizzle with garlic butter sauce.
Garnish with chopped scallions and lemon slices.
