Fillet the redfish on the half shell, leaving the scales and skin on the backside of the fillet. Pat it dry and place it on heavy-duty aluminum foil.
Add some olive oil to the fillet and spread it around. Then, sprinkle the Everglades Fish and Chicken Rub all over the fish and top it with lemon slices.
Preheat the pellet grill to 425°F and place the fillet on the grill for 20 minutes.
In a mixing bowl, combine melted butter, minced garlic, onion powder, and fresh parsley. Mix well.
After 20 minutes, pour the butter mixture over the top of the fillet and continue cooking for another 15 to 20 minutes until the fillet is flaky.
Serve and enjoy your delicious smoked redfish with garlic butter sauce.
