Chicken Chow Mein

Ingredients
- 1.5 pounds chicken breasts
- 1.5 teaspoons baking soda
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper powder
- 4 garlic cloves, grated
- 2 tablespoons rice wine or sherry wine
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon canola oil
- 1/4 cup salted chicken broth
- 4 tablespoons soy sauce
- 2 teaspoons dark soy sauce
- 3 tablespoons oyster sauce
- 1/2 tablespoon sweet chili sauce
- 1 teaspoon sesame oil
- 1 pound frozen noodles
- 3 garlic cloves, chopped
- 1/2 sweet onion
- 3 green onions
- 2 stalks celery
- 1 large carrot
- 1/3 cabbage
- Fresh ginger
Instructions
- Tenderize chicken by massaging with baking soda, then let sit for 20 minutes.
- Prepare marinade with sugar, salt, white pepper, grated garlic, rice wine, soy sauce, cornstarch, and canola oil. Marinate chicken for at least 10 minutes.
- Rinse chicken to remove baking soda.
- Cook noodles until al dente, then drain and set aside.
- Stir fry aromatics (garlic, sweet onion, green onions, celery, carrot, cabbage, ginger) in a wok with oil.
- Remove aromatics and stir fry chicken until browned.
- Fry noodles in the wok, then add chicken and sauce (chicken broth, soy sauce, dark soy sauce, oyster sauce, sweet chili sauce, white pepper, sesame oil).
- Add back aromatics, toss, and finish with rice wine. Serve hot.
