30 g cocoa powder
6 g baking powder
3 g baking soda
0.5 g xanthan gum
1 egg
2 egg yolks
120 g 2% chocolate milk
370 g 2% Greek yogurt
10 g avocado oil
2 g coffee extract
56 g chocolate chips
Instructions:
Preheat oven to 300°F.
In a large bowl, combine erythritol, sugar, salt, flour, protein powder, cocoa powder, baking powder, baking soda, and xanthan gum. Mix thoroughly.
Create a well in the center of the dry ingredients and add eggs, chocolate milk, Greek yogurt, avocado oil, and coffee extract. Whisk wet ingredients together.
Fold wet ingredients into the dry mixture until just combined. Do not overmix.
Scoop batter into jumbo muffin liners, ensuring equal amounts in each cup.
Top each muffin with chocolate chips.
Bake for 38-42 minutes until muffins are set. Use a toothpick to check for doneness.
