Ingredients
- 120 g erythritol
- 30 g sugar
- 4.5 g salt
- 90 g all-purpose flour
- 99 g high-quality chocolate whey casein protein powder
- 30 g cocoa powder
- 6 g baking powder
- 3 g baking soda
- 0.5 g xanthan gum
- 1 egg
- 2 egg yolks
- 120 g 2% chocolate milk
- 370 g 2% Greek yogurt
- 10 g avocado oil
- 2 g coffee extract
- 56 g chocolate chips
Instructions
- Preheat oven to 300°F.
- In a large bowl, combine erythritol, sugar, salt, flour, protein powder, cocoa powder, baking powder, baking soda, and xanthan gum. Mix thoroughly.
- Create a well in the center of the dry ingredients and add eggs, chocolate milk, Greek yogurt, avocado oil, and coffee extract. Whisk wet ingredients together.
- Fold wet ingredients into the dry mixture until just combined. Do not overmix.
- Scoop batter into jumbo muffin liners, ensuring equal amounts in each cup.
- Top each muffin with chocolate chips.
- Bake for 38-42 minutes until muffins are set. Use a toothpick to check for doneness.
- Enjoy warm for a protein-packed breakfast or snack.
