- 1.5 grams yeast
- 285 grams ice water
- 9 grams kosher salt
- 15 milliliters olive oil
Instructions
- For Neapolitan Style Pizza Dough
- Mix flour and yeast, add water, then salt.
- Knead by hand, let rest for 2 hours.
- Cold ferment for 3-5 days.
- Divide, shape, proof, top, and bake at 932°F.
- For Deep Dish Pan Pizza Dough
- Combine flour, yeast, water, oil, and salt.
- Lift and fold technique, refrigerate overnight.
- Shape in cast iron skillet, top, bake at 550°F.
- For New York Style Pizza Dough
- Process flour, sugar, yeast, water, salt, and oil.
- Knead, proof in fridge overnight.
- Divide, shape, proof, top, bake at 700°F.
