Cook the bacon in a pot over medium heat until it is crispy and has rendered its fat.
Remove the bacon from the pot and set it aside. Leave the bacon fat in the pot.
Add the diced onions to the pot and caramelize them in the bacon fat.
Add the chili peppers, black pepper, salt, fresh thyme, brown sugar, smoked paprika, maple syrup, maple balsamic vinegar, and bourbon to the pot.
Cook the mixture for a few minutes until it has reduced and thickened.
Add the cooked bacon back to the pot and stir to combine.
Add fresh parsley to the pot and stir to combine.
Adjust seasoning to taste.
Serve the bacon onion jam on top of steak, chicken, hamburgers, or any other dish you desire.
