Freezer-Friendly Beef and Cheese Burritos

Ingredients
- 6 wheat tortillas (28 cm diameter, 200 calories each)
- 900 grams ground beef (5% fat, 130 calories per 100 grams)
- 250 grams yellow onion (2 large onions)
- 300 grams sieved canned tomatoes
- 1 tablespoon salt
- 20-25 grams black pepper
- A couple of teaspoons of oregano
- 4 Laughing Cow cheese wedges (40 calories each)
- 120 grams reduced-fat shredded mozzarella
Instructions
- In a large pan, heat 5 grams of olive oil over medium-high heat. Add ground beef and cook for 4-5 minutes until browned.
- Season beef with salt, black pepper, and garlic powder. Add diced onions and cook for another 5-6 minutes until onions are translucent.
- Stir in canned tomatoes, salt, pepper, and oregano. Cook for an additional minute.
- Add Laughing Cow cheese wedges and mix until fully incorporated. Then, add shredded mozzarella and continue mixing until melted.
- Transfer the beef mixture to a plate and refrigerate for 20 minutes to cool.
- Prepare 6 pieces of aluminum foil. Divide the beef mixture equally among the tortillas (approximately 225 grams per tortilla).
- Roll the burritos tightly, wrap them in aluminum foil, and place them in a freezer ziplock bag. Freeze for up to three months.
- To defrost, microwave on defrost setting for 7-8 minutes at 260 watts, then 3-4 minutes at 620 watts until hot inside.
