Heat butter in a pan, add garlic and scallions, let butter brown slightly.
Add cooked rice, soy sauce, sriracha, and sesame oil. Stir to coat rice.
Press rice down to crisp it up.
Add oil to the pan, crack an egg, and cook until whites are set but yolk remains runny.
Season egg with soy sauce, scallions, and sesame seeds.
Serve the fried egg on top of the scallion fried rice. Enjoy the runny yolk with crispy rice.
