In a bowl, mix the salmon pieces with grated ginger, salt, pepper, honey, oyster sauce, soy sauce, and Japanese mayo. Let it marinate for 20 minutes.
Preheat the air fryer to 380°F (190°C).
Air fry the marinated salmon for 12 minutes.
(Optional) Prepare the glaze by combining soy sauce, honey, ginger, and a little water in a saucepan. Simmer for 2-3 minutes.
Thicken the glaze with a corn starch slurry.
Once the salmon is cooked, drizzle the glaze over the salmon bites. Serve and enjoy!
