Buffalo Chicken Biscuits

Ingredients
- 1.25 lb (568 g) boneless, skinless chicken breasts
- 6 green onions (100 g), diced
- 2 cups (227 g) shredded cheddar cheese
- 1/2 cup (120 g) buffalo sauce
- 2 and 2/3 cups (320 g) oat flour
- 1/2 tsp (3 g) salt
- 2 tbsp (16 g) garlic powder
- 3 tbsp (4 g) dried parsley
- 2 tsp (8 g) baking soda
- 4 eggs
- 2 and 2/3 cups (600 g) 2% cottage cheese
Instructions
- Boil chicken breasts until cooked through, then shred into small pieces.
- Mix shredded chicken with diced green onions, shredded cheddar cheese, and buffalo sauce.
- In a separate bowl, combine oat flour, salt, garlic powder, parsley, and baking soda.
- Beat eggs and add them to the dry ingredients along with cottage cheese, chicken mixture, and remaining cheddar cheese.
- Form the dough into biscuit shapes using a cookie scoop and place on oiled sheet pans.
- Bake at 375°F (190°C) for 15-17 minutes until golden brown.
- Cool the biscuits and store in a vacuum-sealed bag in the freezer.
- To reheat, microwave for a softer texture or air fry at 375°F (190°C) for 6-7 minutes.
