Prepare two boxes of gluten-free vanilla cake mix according to the package instructions and bake it in a sheet pan.
Make the filling by combining whipped cream, a little vanilla pudding mix, and Easy Gel to stabilize and flavor it.
Cut out tree shapes using a tree cookie cutter and slice each tree in half.
Pipe the stabilized whipped cream into the middle of the tree and top with the other cake half.
Smooth out any excess cream using an offset spatula.
Freeze the cakes for at least 8 hours or overnight.
Melt the white chocolate melts and dip the frozen cakes into the chocolate.
Decorate the trees as desired and enjoy!
