Place chicken thighs at the bottom of a pre-greased crockpot.
Add in two cans of condensed chicken noodle soup and frozen mixed veggies.
Mix in chopped onions.
In a separate bowl, fill the empty cans with chicken broth (use low sodium) and pour over the veggies.
Season with garlic powder, oregano, parsley, and black pepper. Stir well.
Cover and cook for 3 to 4 hours on high or 5 to 6 hours on low.
Cut Pillsbury Grands biscuits into quarters and place on top of the mixture.
Cover and cook for an additional 30 to 45 minutes until the dumplings are cooked.
Garnish with green onions before serving. Enjoy your easy dinner!
