Steep oolong tea in hot water for 15 minutes, then strain.
Add lemon peel, orange peel, black lime, star anise, cinnamon, and bitter orange to the tea. Cover and simmer over low heat for 2.5 to 3 hours.
Strain the mixture, then sweeten with cane sugar, orange juice, lemon juice, and vanilla extract. Chill in the fridge for a couple of hours.
To serve, pour a portion of the mix over crushed ice. Add soda water, lime bitters, vanilla extract, and lime juice. Enjoy the flavorful homemade Cola with a caffeine kick from the Oolong tea.
