In a bowl, combine the creamy base, skim milk, almond milk, vanilla whey protein, cookies and cream pudding mix, and zero-calorie sweetener. Mix well.
Pour the mixture into a freezer-safe container and freeze overnight.
Once frozen, run the container on the light ice cream setting. Use a butter knife to hollow out the middle and insert two sandwich cookies.
Run the ice cream on the mixed-in setting to incorporate the cookies. Enjoy this guilt-free treat!
