Make the polish by mixing 300 milligrams of water, 5 milligrams of honey, 6 grams of fresh yeast, and 300 grams of zero zero flour. Let it rest for 1 hour at room temperature and then put it in the fridge for 16 to 24 hours.
Mix the polish with 400 milligrams of water and add 700 grams of zero zero flour, 25 grams of sea salt, and 10 grams of olive oil. Mix until everything is together.
Work the dough on a counter until it is smooth and then let it rest for 15 to 20 minutes.
Form the dough into balls of around 250 grams and let them rest at room temperature for 2 hours.
Stretch the dough and add toppings of your choice.
Bake the pizza in an oven preheated to the max temperature for about 10-15 minutes or until the crust is golden brown.
