In a pan, add diced red bell pepper, red onion, zucchini, and orange bell pepper or cherry tomatoes. Drizzle olive oil over the top and season with salt, oregano, red pepper flakes, and minced garlic. Stir together and add 6 ounces of feta cheese in the middle.
Bake or smoke the vegetables and feta cheese for 30-35 minutes until the vegetables are cooked.
Boil a pound of pasta and drain.
In a large bowl, add the cooked feta cheese and vegetables to the pasta.
Add a handful of Parmesan cheese, a couple tablespoons of Greek dressing, and the meat from a rotisserie chicken.
Add a big handful of arugula, pepper, and lemon juice.
Toss everything together and serve.
