Ingredients
- 250g ricotta
- 80g sugar
- 80ml milk
- 50g seed oil
- 1 zest of one orange
- 1 zest of one lemon
- 1 sachet of baking powder for desserts
- 400g flour
- 1 liter oil for frying
- granulated sugar for coating
Instructions
- Combine wet ingredients and flavorings: In a large glass bowl, add 250g of ricotta cheese, 80g of sugar, 80ml of milk, 50g of seed oil, the zest of one orange, the zest of one lemon, and 1 sachet of baking powder.
- Mix the wet ingredients: Using a fork, mix all the ingredients in the bowl until they are well combined and form a creamy mixture.
- Add flour gradually: Start adding 400g of flour to the mixture, a little at a time, mixing with the fork until the dough starts to form.
- Knead the dough: Transfer the dough to a lightly floured surface and knead until it becomes smooth, soft, elastic, and no longer sticky.
- Shape the graffe: Take a small portion of the dough, roll it into a thin rope, curve it into a 'C' shape, and pinch the ends together to seal.
- Heat the frying oil: Heat a sufficient amount of oil in a deep pan over medium-high heat.
- Fry the graffe: Carefully place the graffe into the hot oil, frying until golden brown on both sides.
- Drain the graffe: Place the fried graffe on a paper-lined tray to drain excess oil.
- Coat with sugar: While the graffe are still warm, roll them in granulated sugar until well coated.
