General Tso's Chicken

Ingredients
- 2 chicken breasts
- 1 egg
- Cornstarch
- Baking soda
- Oil
- Dark soy sauce
- Light soy sauce
- Oyster sauce
- Ketchup
- Tianjin dried chili peppers
- Garlic
- Cola
- Sugar
- Vinegar
- Broccoli
- Salt
- Ice water
Instructions
- Cut the chicken breasts into one-inch cubes.
- Mix one egg in with the chicken cubes.
- Add cornstarch and baking soda to the chicken mixture to velvet it.
- Add oil to the chicken mixture and refrigerate for 30 minutes.
- Prep the sauce by mixing dark soy sauce, light soy sauce, oyster sauce, ketchup, and chili peppers in a wok.
- Add cola to the sauce and let it reduce.
- Add cornstarch to the sauce to thicken it.
- Add sugar and vinegar to the sauce to balance the flavors.
- Fry the chicken cubes in oil at 400 degrees Fahrenheit until golden brown.
- Double-fry the chicken cubes at 450 degrees Fahrenheit for extra crispiness.
- Add the chicken cubes to the sauce and cook for a minute.
- Blanch broccoli in salted water and ice water.
- Plate the General Tso's chicken and garnish with broccoli.
