Season the chicken tenders with salt, pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper. Mix well and allow them to dry out.
Prepare a flour mixture with cornstarch, baking powder, and the same seasonings used for the chicken. Transfer one third of the mixture to another bowl and add club soda to create a thin pancake batter consistency.
Dip the seasoned chicken tenders first into the dry flour mixture, then into the wet batter, back into the dry, and finally into the wet again.
To make the honey barbecue sauce, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, honey, and cold butter in a saucepan. Cook until smooth.
Fry the chicken tenders in oil set at 350°F for 5-6 minutes, then allow them to rest. Return them to the oil for an additional minute until golden brown.
Serve the honey barbecue chicken tenders with the prepared sauce and optionally dip them in ranch dressing. Enjoy!
