Marinate drumsticks with bay leaves, black pepper, garlic, Thai chilies, mushroom seasoning, oil, white vinegar, dark soy sauce, light soy sauce, salt, and rock sugar for 3-4 hours.
Cook marinated chicken in a pot until it boils, then simmer for 45 minutes.
Optional: Add eggs to the pot and let it sit for 30 minutes.
Prepare the Filipino sauce by mixing soy sauce, vinegar, red onion, white onion, chilies, and black pepper.
Serve the chicken adobo with rice, eggs, and the Filipino sauce. Enjoy!
