Instant Pot Birria Tacos (Original video)

Ingredients:

• 2 pounds chuck tender roast
• 4 cups beef broth
• 7 guajillo or New Mexico chile pods
• 2 chile pasilla
• 2 chile de arbol
• 4 bay leaves
• 5 garlic cloves
• 2 tablespoons vinegar
• Small piece of cinnamon
• 8 whole cloves
• 1 teaspoon oregano
• 1 teaspoon whole black pepper
• 1/2 teaspoon whole cumin
• 1/2 teaspoon thyme
• 1/4 teaspoon ground ginger
• Salt
• Olive oil
• Queso Oaxaca
• Onion
• Cilantro
• Lime or lemon juice
• Tortillas

Instructions:

1. Cut chuck roast into big chunks, season with salt, and set aside.
2. Prepare chilies by removing stems and seeds, rinse, then boil in water.
3. Blend chilies, garlic, spices, cinnamon, bay leaves, broth, and vinegar to make a sauce.
4. Brown meat in Instant Pot with olive oil.
5. Add sauce, remaining broth, bay leaves to Instant Pot, pressure cook for 55 minutes.
6. Shred meat, fry tortillas, assemble tacos with meat, queso Oaxaca, onion, cilantro.
7. Serve tacos with consomme made from broth, lime or lemon juice, onion, and cilantro. Enjoy!
