Slice zucchinis with a julienne peeler or grate them. Mix with 1 teaspoon of salt and let sit for 15 minutes.
Chop the onion and sauté in vegetable oil until softened. Add julienned carrot and cook for 2 minutes.
Add chopped red pepper and cook for an additional 2-3 minutes. Drain excess water from zucchinis and add the cooked vegetables. Mix in parsley, salt, and black pepper.
In a separate bowl, whisk together eggs, milk, and flour. Pour this mixture over the vegetables and combine.
Line a baking tray with oiled baking paper. Pour the vegetable mixture into the tray.
Bake at 200°C for 35 minutes. Sprinkle cheddar cheese on top and bake for another 15 minutes until cheese is melted and bubbly.
