Heat olive oil in a pot, add diced onion and ground beef. Break up the meat and cook until moisture evaporates.
Add garlic, salt, black pepper, cayenne pepper, paprika, herbs, and bay leaves. Cook for 3-4 minutes.
Add chicken broth, diced tomatoes, marinara sauce, water, and soy sauce. Simmer for 30 minutes.
Raise heat, add macaroni, and cook for 12 minutes until tender.
Turn off heat, stir in parsley and cheddar cheese. Cover and let sit for 5 minutes.
Uncover, stir, adjust seasoning if needed, and serve. Optional: garnish with more cheese and parsley.
