Sweet Pea Fish Pie

Ingredients
- 300 grams of salmon
- 300 grams of white fish
- 500 ml of milk
- 1 kilogram of potatoes
- 400 grams of frozen peas
- 100 grams of frozen spinach
- 2 onions
- 2 carrots
- 60 grams of flour
- 1 teaspoon of mustard
- 40-50 grams of cheddar cheese
- Half a lemon
- Butter
- Salt and pepper
Instructions
- Poach salmon and white fish in a pan with 500 ml of milk for about 10 minutes until flaky.
- Boil peeled and chopped potatoes for 15 minutes. Add frozen peas for a minute, then drain.
- In a separate pan, sauté finely chopped onions and carrots in olive oil. Add flour and mustard, then gradually mix in poaching liquid to create a sauce.
- Add frozen spinach to the sauce and let it melt.
- Season the sauce with salt, pepper, cheddar cheese, and lemon juice.
- Break up the poached fish into chunks and mix into the sauce.
- Mash boiled potatoes with butter, salt, and pepper.
- Spread the mashed potatoes over the fish and sauce mixture in a baking dish.
- Bake until golden and bubbly.
