1 cup brown sugar (or white sugar with a glug of molasses)
A splash of vanilla extract
1 teaspoon kosher salt
1 egg
6 ounces (170 grams) mixed white and dark chocolate chips
1 teaspoon baking powder
1 cup all-purpose flour (120 grams)
Ice cream (flavor of your choice)
Instructions:
Melt butter and mix with sugar, vanilla, salt, and egg until smooth.
Add chopped chocolate chunks, baking powder, and flour to form a wet and sticky dough.
Spread the dough thinly on a parchment-lined baking sheet and bake at 375°F (135°C) until underbaked.
Cut the baked cookie sheet in half and remove the top sheet carefully.
Place scoops of ice cream on one half of the cookie sheet, alternating flavors for a marbled effect.
Place the other half of the cookie sheet on top of the ice cream and compress gently to close gaps.
Freeze the assembled ice cream sandwich until firm.
Cut into squares using a sawing motion with a knife for cleaner cuts.
Optionally, wrap the sandwiches in parchment paper and chill before serving.
