Soak dried chili peppers in hot water for at least 10 minutes. De-stem, de-seed, and blend with chili water, fresh garlic, spice blend, and apple cider vinegar until smooth.
Marinate 96% lean beef in the chili pepper mixture for at least 1 hour. Cook over high heat until seared.
In the same pan, cook egg whites with butter over low heat until combined. Add reduced-fat cheddar cheese and mix well.
Assemble burritos with equal amounts of chorizo and cheesy eggs. Roll tightly and enjoy.
