Slice chicken thighs in half and place in a bowl. Add yogurt, olive oil, lemon zest and juice, fresh garlic, salt, paprika, cumin, oregano, coriander, and pepper. Cover and marinate for up to 12 hours.
For the homemade spit, use a thick slice of onion and two wooden skewers. Thread the marinated chicken onto the skewers and roast in a 350°F oven until the internal temperature reaches 165°F.
For the tzatziki sauce, combine yogurt, grated and drained cucumber, fresh garlic, lemon juice, dill, and salt in a bowl.
Once the chicken is roasted, slice it off the spit onto a warmed pita. Add tzatziki sauce, tomatoes, cucumbers, red onion, and feta cheese.
Serve and enjoy!
