Greek Chicken Euros on a Homemade Spit

Ingredients

  • Chicken thighs
  • Yogurt
  • Olive oil
  • Lemon zest and juice
  • Fresh garlic
  • Salt
  • Paprika
  • Cumin
  • Oregano
  • Coriander
  • Pepper
  • Onion
  • Wooden skewers
  • Cucumber (grated and drained)
  • Dill
  • Tomatoes
  • Cucumbers
  • Red onion
  • Feta cheese

Instructions

  1. Slice chicken thighs in half and place in a bowl. Add yogurt, olive oil, lemon zest and juice, fresh garlic, salt, paprika, cumin, oregano, coriander, and pepper. Cover and marinate for up to 12 hours.
  2. For the homemade spit, use a thick slice of onion and two wooden skewers. Thread the marinated chicken onto the skewers and roast in a 350°F oven until the internal temperature reaches 165°F.
  3. For the tzatziki sauce, combine yogurt, grated and drained cucumber, fresh garlic, lemon juice, dill, and salt in a bowl.
  4. Once the chicken is roasted, slice it off the spit onto a warmed pita. Add tzatziki sauce, tomatoes, cucumbers, red onion, and feta cheese.
  5. Serve and enjoy!
