Greek Chicken Euros on a Homemade Spit

Ingredients
- Chicken thighs
- Yogurt
- Olive oil
- Lemon zest and juice
- Fresh garlic
- Salt
- Paprika
- Cumin
- Oregano
- Coriander
- Pepper
- Onion
- Wooden skewers
- Cucumber (grated and drained)
- Dill
- Tomatoes
- Cucumbers
- Red onion
- Feta cheese
Instructions
- Slice chicken thighs in half and place in a bowl. Add yogurt, olive oil, lemon zest and juice, fresh garlic, salt, paprika, cumin, oregano, coriander, and pepper. Cover and marinate for up to 12 hours.
- For the homemade spit, use a thick slice of onion and two wooden skewers. Thread the marinated chicken onto the skewers and roast in a 350°F oven until the internal temperature reaches 165°F.
- For the tzatziki sauce, combine yogurt, grated and drained cucumber, fresh garlic, lemon juice, dill, and salt in a bowl.
- Once the chicken is roasted, slice it off the spit onto a warmed pita. Add tzatziki sauce, tomatoes, cucumbers, red onion, and feta cheese.
- Serve and enjoy!
