Sauté 3 cups of onions with fresh thyme, salt, and pepper in olive oil until soft and translucent. Remove from heat and mix in Worcestershire sauce and tomato paste. Let it cool slightly.
In a large bowl, combine the onion mixture with ground chuck, eggs, and breadcrumbs. Mix gently until well incorporated.
Shape the meatloaf mixture into a free-form loaf on a baking sheet. Top with ketchup.
Place the meatloaf in the oven in a pan of hot water to steam around it while cooking. Bake at 350°F for about an hour or until the internal temperature reaches 160°F.
Let the meatloaf rest for a few minutes before transferring it to a serving platter. Slice and serve with mashed potatoes. Enjoy the tender, flavorful meatloaf!
