Stuff the chicken with half a lime and half of a whole garlic clove.
Pat the chicken dry and season with mustard powder, garlic powder, dry herb seasoning, black pepper, salt, and oil. Rub in the seasoning and with the seasoning that balls up, add it to some melted butter and then brush it onto your whole chicken.
Add some more salt and in a roasting pan combine some mini yellow potatoes, broccoli, oil, salt, pepper, and the rest of that whole garlic clove. Place the seasoned whole chicken on top and bake in the oven for 25 to 30 minutes until you get a crust.
Cover with aluminum and bake for another 30 minutes.
For the maple butter sauce, combine maple syrup, butter, brown sugar, soy sauce, and lime juice. Melt the butter before adding it to the mixture.
After 30 minutes, remove the foil and transfer your whole chicken to a flat baking tray or a wire rack. Brush on some maple butter sauce and back in the oven for 20 minutes.
Cook down the leftover maple butter sauce with some starch water to help it thicken and use that as a glaze and a dipping sauce for your chicken when you're ready to serve it.
Let the chicken rest for 10 minutes before carving and serving with the maple butter sauce. Enjoy!
