Perfect Rice Mixed with Vegetables and Brown Fried Chicken with Fried Plantain on the Side (Original video)
Ingredients:
Chicken
Onions
Peppers and onions mix
Mixed vegetables (corn, green beans, carrots)
Jalapeno peppers
Sweet peppers
Scallions
Garlic cloves
Basmati rice
Maggi seasoning
Black pepper
Salt
Oregano
Thyme
Rosemary
Butter
Curry powder
Turmeric powder
Plantain
Extra virgin olive oil
Adobo seasoning
Instructions:
Season the chicken with Adobo seasoning and cook it in a pot with onions, peppers and onions mix, and blended ingredients (scallions, jalapeno peppers, garlic, onion, sweet peppers) until it's done.
Strain the broth from the chicken and add a stick of butter to the pot. Once melted, add a couple of spoons of blended ingredients and garlic paste. Fry for 5 minutes on low-medium heat.
Add washed rice to the pot and toast it for 5-6 minutes on low-medium heat. Add 1 teaspoon of curry powder and 1 teaspoon of turmeric powder. Toast for another minute.
Add the strained chicken broth to the pot and mix well. Cover with foil paper and cook on low-medium heat for 20 minutes.
Fry the plantain in hot oil until golden brown and crispy.
Fry the cooked chicken until golden brown.
Cook frozen mixed vegetables in extra virgin olive oil with blended ingredients, curry powder, and Adobo seasoning for 5 minutes.
Add cooked rice to the vegetables and mix well.
Plate the rice, chicken, and plantain and enjoy!
