Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking soda, and salt.
In a separate bowl, cream together coconut oil and brown sugar. Add almond milk and vanilla extract, mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
Fold in the chocolate chips.
Scoop cookie dough onto the prepared baking sheet and flatten slightly.
Bake for 10-12 minutes or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
