For the first variation, grate the garlic into a bowl, add the Ramen spice packet, mayo, and whisk. Boil water, cook Ramen noodles with dried vegetables per packet instructions, and boil an egg for 6 minutes.
Chop the whites of spring onions, add to cooked noodles, and reserve the greens for later. Mix in water, add the cooked egg, spring onion greens, chili oil, sesame seeds, and pickled ginger.
For the second variation, chop an onion, grate garlic, and sauté in oil. Add leftover greens, Ramen spice mix, vegetables, and boiling water. Cook noodles per packet instructions.
Crack an egg, season with salt and chili mix. Stir noodles, add egg, and mix until cooked.
